This summer Chris and I have been working hard and keeping busy with family, friends, our careers, and dealing with everything life throws at us. On our blog this week we talked about how important romance is in keeping relationships healthy and wrote how to turn a camping trip into a romantic getaway. We wanted to put our words into action and follow our own advice with this delicious healthy muffins recipe!
On sunday we woke up early, packed a picnic lunch, and headed out to Mont Tremblant, Quebec to spend the day hiking. Chris and I have always felt more at peace with each other, and with the world, when we are hiking. Its amazing to walk in silence for hours and still feel like we are connecting on a deeper level. Hiking can bring us new ideas, different perspectives, and a better understanding of each other. We take turns being in the lead and choosing the best path to follow. We notice different aspects of nature and point out what we find. Chris loves the colorful and oddly shaped funguses that cover the forest floors, and I love listening to the squirrels chattering and crunching in the leaves.
Having our picnic lunch at the top of a mountain, looking out over the forest and rivers gave us a feeling of accomplishment. We finished our hike in the early evening, exhausted and sweaty, ready to head back home and cuddle in front of the TV. After having such a healthy weekend filled with activity and nature I wanted to keep the ball rolling. Chris went into our backyard and picked a handful of apples from our tree to make some healthy apple muffins for the week.
An Apple Muffin A Day Keeps The Doctor Away!
Our backyard has a massive apple tree and this year it has decided to grace us with hundreds of delicious tart green apples. Even the squirrels have been enjoying themselves by eating all the fallen ones. With more apples than I know what to do with I have been on a baking frenzy, but I can only make so much before having an apple overdose.
I am loving this apple banana muffin recipe because they are perfect for a quick morning bite when rushing off to work, or an afternoon snack. They are on the healthier side so I don’t feel guilty eating them like I would a slice of apple pie, and they aren’t overwhelmingly apple flavoured so I don’t feel like I am overdosing on apples. I am pretty sure these muffins freeze pretty well too but I will have to get back to you on that one!

Apple Banana Muffins Recipe
1½ cups rolled oats
1 cup whole wheat flour
2 tsp baking powder
½ tsp salt
1 tsp cinnamon
½ tsp nutmeg
2 tbsp coconut oil
3 tbsp honey
1/2 cup almond milk/ cashew milk
1 cup mashed ripe banana (1 ½ bananas)
1 cup chopped unpeeled apples
- Mix together the oatmeal, whole wheat flour, baking powder, salt, cinnamon and nutmeg and set aside.
- In a mixer beat the eggs. coconut oil and honey then slowly add the almond milk.
- Add the dry ingredients until just mixed then add in the mashed banana and chopped apple.
- Spoon into greased or paper lined muffin tins and bake at 350F degrees for 25 minutes or until a toothpick inserted in the center comes out clean.
- Makes 16-20 muffins depending on size.
